We are a small homestead farm specializing in chicken, duck, rabbit, and goose.
Duck and chicken chicks have been arriving since March and we now have a full house! Processing starts late April and continues through Thanksgiving. Since we process here on the farm we'll have something fresh almost every week here and at the Salem NH Farmer's Market. We’ll have everyone’s favorite big-breasted Cornish Cross chicken, the savory pekin duck, and we’ll mix it up a bit with some Royal Gray Broilers again. This is a heritage-ish chicken that has a larger thigh portion and longer breast. The Gray Broiler takes longer to grow, but it’s bigger on taste. I think the Mystic Onyx was a big hit last year. These were Hoover’s mix of Silkie and broiler breeds. We will also continue breeding the American Bresse with it's amazingly succulent breast meat and a large dark full-flavor dark meat. We'd like to offer more of the heritage duck with the all-time favorite, Pekin duck. The heritage duck, though smaller, has a deeper flavor because it eats more bugs and moves around the yard more than the Pekin. We are what you eat after all.
On the topic of feed, we’re going to try some new feedstuffs. The winters are just too dreary so we’re introducing fodder to our barnyard diet. The geese will get the first graze and then the chickens can devour the rest. The ducks are partial to bugs… more on that later this summer. Teaser... they're red and they wiggle and the others are black and full of protein...
To cap of the season in the Fall we will again offer pastured turkey and as much holiday goose as possible. Who knows what else will come up, but we’re sure you’ll enjoy. Step outside the box and try something new-ish or feast on the freshest and tastiest local chicken from Flying M. We process whole or parts and beak to feet. We are raising a new breed of chicken, the Gray Broiler (left). A heritage-type bird, it reaches its full size at 12 weeks vs the fast growing industry chicken Cornish Cross which is ready at 7-9 weeks. Compared to the Cross, the breast is more elongate, the thigh is larger, and there is a more flavorful yellow fat.
Flying M Farm is teaming up again with Watterson Farm in Hampton Falls in 2024 to bring you a pasture-raised turkey. We know you'll love and appreciate this meal with friends and family. We will start taking orders mid-September. We might do some 'midget whites' too so even the smaller households can enjoy a whole succulent bird on Thanksgiving!
